Muffins are a quick easy, throw it all in a couple of bowls and mix then cook and within 30min you’ll have some delicious muffins. This sweet treat is fantastic for using up those over ripe bananas.

Pro-tip: if your bananas aren’t very ripe, could you wait a day or two, the riper the banana the more of “Banana” they will taste.

What if I don’t like… in Banana & White Chocolate Muffins?

White chocolate can easily swapped for dark chocolate or even caramel chunks.

Can I freeze muffins?

Yes! you can, of course more complex muffins with toppings that don’t freeze well (e.g. fresh strawberry) won’t freeze well but these ones will.

Bake them as per the instructions and then allow to cool completely before putting in ziplock freezer bags (affiliate link) and popping in the freezer. They will be frozen solid in about 4 – 5 hours.

Defrosting

just take out of the freezer the number your require and allow to defrost in the fridge over night.

Ingredients
  

  • 280 g / 10oz Plain flour
  • 1 Tsp baking powered
  • 1 Tsp bicarbonate of soda
  • 1/2 Tsp salt
  • 4 Large well ripened Bananas
  • 1 Egg beaten
  • 100 ml / 4 fl oz of milk
  • 100 ml/ 4fl oz of vegetable oil or 90g melted butter
  • 90 g / 4oz of White chocolate chip

Instructions
 

  • Preheat oven to 200c (conventional oven or 190C Fan), 390F or gas mark 6 and prepare muffin tins with either silicone or paper muffin cases.
  • In a large bowl sift the flour, baking powder, salt and bicarbonate of soda finally adding the white chocolate chunks.
  • In another bowl Add the Bananas then mash with a Potato masher then stir in Sugar, egg, oil and butter and vanilla extract.
  • Pour the wet ingredients in to the dry and mix till now flour is mixed but still maybe lumpy.
  • Spoon in to the pre-prepared muffin tins(affiliate link) and muffins cases (affiliate link) and bake for 20-25min or until Golden brown
