This is a lovely moist banana loaf and the chocolate is just an added bonus, any bananas are good, but more ripe the better.

Storage

This loaf can be frozen to save for another day, just observe safe freezing guidelines (make sure it has cooled before trying to freeze it)

Just common sense when storing, an airtight container, and it should last a few days. Not that it last that long in our house.

What if I don’t like?

Chocolate, If you don’t like milk chocolate, swap it out for white or dark chocolate. Or skip it out completely

Chocolate chip banana loaf

This is a lovely moist banana loaf and the chocolate is just an added bonus, any bananas are good, but riper the better.

Equipment

  • 1 mixing bowl
  • Loaf tin 900g / 2lb
  • whisk
  • Wire cooling rack
  • Baking parchment

Ingredients
  

  • 100g Butter, soft 4oz
  • 175g Caster sugar 6oz
  • 225g Self Rasing flour 8oz
  • 1 teaspoon baking powder
  • 130 grams Chocolate chips
  • 1 teaspoon Vanilla essence

Instructions
 

  • Pre-heat oven to 180°c / 160°c / 356 °F
  • Lightly grease a tin and line with baking parchment
    100g Butter, soft 4oz
  • Measure and put all the ingredients in to one mixing bowl and mix with an electric mixer for about 3min. Or by hand until well mixed and lump free
    100g Butter, soft 4oz, 175g Caster sugar 6oz, 225g Self Rasing flour 8oz, 1 teaspoon baking powder, 130 grams Chocolate chips, 1 teaspoon Vanilla essence
  • Pour mixture in to the baking tin
  • Bake for 1 hour, until well risen and golden. Test with a cocktail stick in the centre, it should come out clean.
  • Remove from the baking tin and allow to cool on a wire rack completely
