This is a quick and easy bacon and mushroom carbonara, can be made in the time the pasta takes to boil. It goes well with a Garlic & basil ciabatta.

Storage

While it might be possible to store this for reheating another time, I wouldn’t, it is a meal that is definitely enjoyed best hot and fresh

Equipment

  • Pan for pasta
  • Frying pan.
  • mixing bowl
  • Knife
  • 2 jugs (to separate eggs)

Ingredients
  

  • 4 rashes Smoked bacon or 100g smoked bacon lardons
  • 4 egg yokes
  • 150 g low fat soft cheese spread
  • 180 g Pasta of your choice
  • 250 g Mushrooms sliced
  • ½ teaspoon dried rosemary
  • 2 cloves of garlic crushed

Instructions
 

  • Bring salted water to the boil, adding pasta and start to cook.
  • While the pasta is cooking, add a splash of oil to a frying pan and fry the bacon, rosemary, garlic and mushrooms till the bacon is cooked.
  • Meanwhile,  in a bowl, add the egg yokes and soft cheese and whisk together until smooth. Then season with salt and pepper.
  • Once the pasta is cooked the bacon should be ready too, mix them together then pour over the egg and cheese mixture and stir well until combined.
